Easy Dinner Cauliflower Ravioli

Another night of me tossing something together for dinner. No recipe, just some ingredients and everyone staying out of the kitchen to let me do my thing.

Tonight I present to you,

 Cauliflower Ravioli with Zucchini and Tomatoes

Serves 6

What you will need....

3 packages Trader Joe's Half moon Cauliflower Ravioli (Any brand you have available will do)
2 Medium Zucchini 
1 pint of Grape Tomatoes
4 Tbsp Olive Oil 
1 Tbsp  Butter
2 Cloves Minced Garlic
   Grated Romano optional

Now Cook! 

Put a large pot of water on to boil for the ravioli. Heavily salt. 
While you wait for the water to boil, quarter and dice the zucchini into 1/4in. bites.
Mince garlic.

Heat a skillet on high heat. Add the olive oil and butter. Turn heat to low till butter is melted. 
Once melted, add the zucchini, tomatoes, and garlic. Saute on medium high heat tossing occasionally. 

Once water boils, add ravioli and stir with wooden spoon. Bring heat down to medium high but still boiling. Ravioli will float immediately
but will only take 5 minutes tops. Scoop out 1 cup of pasta water and set aside. When the tomatoes are wrinkling and peeling, add 1/2 cup reserved pasta water and stir. Use a slotted spoon to transfer the ravioli from the water to the sauce. Serve and spoon the vegetables and sauce onto the ravioli. Garnish with romano if you want.
